Everything is good in fish!
Jean Pascal Bergé spoke by videoconference from Vietnam to explain the many applications that waste in fisheries has generated. The use of fish heads, skin, viscera, etc. for the development of new products makes "a substantial reduction in the volume of waste to be processed." Among the various uses that can be given to this hitherto waste, Berger referred to the production of oil, protein, omega 3, gelatin, peptides, calcium, etc.
